Specifically, a 2 door E34. I like the proportions of the E34 and they can be had cheaper than an E24 from what I can tell. I think it would be a neat project.

Why not just an E31 840ci V8 manual gearbox car?

The E31 was never available with a manual in the US AFAIK, and I can get a choppable E34 for 1/3 the cost of a crap E31.

Interesting, I didn't realize that the V8s were auto-only in the US.

All the more reason for an E39 M5 V8 + 6MT swap. Lighter and less troublesome than the V12 is reported to be.

Chopping up a car to be a coupe that isn't one... is a lot of trouble...

The body has to be cut just right, and then new sheet metal, rear quarter glass, longer doors and door glass...

It would be better to start with a coupe that already exists, and put the driveline that you like in it... an E36, E46, or E31.

The costs of fabrication to cut-and-shut a car like that... especially around a structural B-pillar, would quickly exceed an E31 that could benefit from some attention.

And a cut-and-shut E34 would never look as good as E31 already looks.

It's not the drivetrain I'm looking for, but the looks of the E34 with two doors. Now that I think of it, it might be easier to get a trashed E34 and just graft the front and rear clips onto it.
